“Born from Fire, Aged by Water”, this is Orygini’s motto. Orygini is a Sicilian venture unanimously regarded as one of the most solid players worldwide in the field of deep-water wine aging.
Adopting innovative, patented techniques and sound experimental protocols validated by scientists, Orygini has embarked on a rigorous project aimed at demonstrating the beneficial effect that deep-water aging has on fine wine.
The wines chosen for our deep-water aging project are an Etna Bianco Superiore and an Etna Rosso.
Each bottle is to be considered a one-of-a-kind collection item, with the original trace of underwater aging etched on each individual piece and a special hand-crafted brass seal applied to each bottle by the famous Napoli brothers, regarded as the custodians of the ancient Sicilian tradition of the Puppet Theater, a Unesco Cultural Heritage.
These are limited-edition bottles that we have decided to make available to Benanti Club members.
Intrigued by this, years ago we have entrusted Orygini with the task of aging a very small number of our bottles at 48 meters (157 feet) below sea level. At constant, cool temperatures, in the absence of light and subject to smooth rocking and strong water pressure, these wines have developed specific characteristics that set them apart from conventionally-aged wine.
After months spent on the bottom of the sea in the Cyclops Island Marine Protected Area, just off the volcanic coast of Sicily, and two years of further aging on land, we have asked professional wine taster Enrico Donati - a certified Wine & Spirits Education Trust (WSET) Educator - to taste these special bottles with us and describe their original evolution.
